Rapid cooling cabinet INC
The rapid cooling machine is changing from optional type to a necessary type of equipment. The optimum temperature for bacterial reproduction is between 20-50°C. The purpose of rapid cooling is to shorten the time of staying in this dangerous temperature range as much as possible during the cooling process of the smoked product. The longer the stay, the more bacteria will multiply. For general products, the center temperature of the product will drop to about 15°C within 22 minutes

- Product weight when entering the smoked furnace: 5.04kg/pole
- Product weight when exiting the smoked furnace: 4.71kg/pole (-6.5%)
- Product weight when exiting the rapid cooling machine: 4.64kg/pole (-1.49%)
- The core temperature when entering the rapid cooling machine: about 70℃
- The core temperature when exiting the rapid cooling machine: about 10~13℃
